Smoked (Turkey) Sausage and Zucchini Skillet

Hello all! Tonight's recipe is a Smoked Sausage and Zucchini Skillet! I love this recipe because it has tons of vegetables and sausage (which I don't cook with very often). I prefer to serve this skillet with jasmine rice but honestly it's filing with or without the rice.


Smoked (Turkey) Sausage and Zucchini Skillet


Recipe:


1 Ib of Smoked Sausage (I used butterball smoked turkey sausage and sliced it)
1/2 medium sized onion (diced)
1 tsp minced garlic
1 tbsp. butter or olive oil
1 or 2 medium sized zucchinis (sliced or diced)
1 or 2 medium sized squash, (sliced or diced)
1 container of grape/cherry tomatoes (sliced lengthwise)
1 tsp Oregano
1/2 tsp Red Pepper flakes
1/2 Salt and Pepper


Cooking instructions:


Heat skillet with butter and add diced onions; Cook until soft/translucent.
Add in garlic and cook for about a minute before adding in sausage. Cook this for 5-7 minutes.
Stir in veggies and seasoning. Cover with lid to let steam for 7-10 minutes.
Season to taste (I usually have to add a little more salt and pepper, thyme, and nutmeg).
Serve over steamed rice or alone.
