Good morning! On today's post, we're going to be making a spinach and feta quiche (photo below). Typically, I only have time for coffee in the morning so I have been looking for a quick and easy meal that I could pack the night before and take to work for breakfast. One thing that I love about this recipe is that it is incredibly versatile. There are so many combinations that you can do with it. I think next time I'll add mushrooms to mine. This recipe was not only easy but delicious!
Recipe:
1 - 9 inch pie crust (I prefer the roll Pillsbury roll out crust)
5 eggs
1 cup of milk (I used 2% since that's what I had)
4 oz feta cheese
Handful of Mozzarella cheese (I used finely shredded Italian blend)
2 cups of fresh or frozen spinach
1 tsp butter, cut into little pieces
Olive Oil
Salt and Pepper
Cooking Instructions:
Preheat oven to 375 f.
You will need to roll out the pie crust into a pie pan and then make sure you bake it for half the recommended time (usually about 7minutes
Sautee spinach in a little bit of olive oil. I seasoned mine with salt, pepper, and a little nutmeg.
Drain excess oil from spinach and let cool.
In a mixing bowl, combine the eggs, cheese, and milk and beat thoroughly. Then salt and pepper to taste.
Spoon cool spinach into pie crust (make sure it's evenly dispersed). Then pour egg/cheese/milk mixture on top.
Sprinkle with shredded cheese and place little dots of butter on top.
Bake for 40-45 minutes until golden brown and enjoy!
