Buffalo Chicken Quesadillas!

Good afternoon and happy Monday wonderful followers! Anyone who knows me knows that I love buffalo chicken so when I came across this recipe (thanks pinterest) for buffalo chicken quesadillas I knew I had to try them. They were easy and dinner was on the table in under 30 minutes!








Recipe:
1/4 c of buffalo sauce (I used Frank's Red Hot)
1 lb chicken breast
4 tbs of ranch dressing
Salt
Pepper
Flour tortillas (large)
4 tbs of butter
1 1/2 c of shredded cheese ( I used Mexican blend since that's what I had on hand)


Cooking Instructions:
Toss chicken with buffalo sauce, salt, and pepper.
Heat butter in a larger skillet over medium heat or spray with non-stick spray.
Place tortilla in pan and layer with cheese, chicken, a drizzle of ranch, and more cheese.
Then close and cook until it reaches desired level of crispiness.
Repeat with the rest of your tortillas.


I served mine with a side of ranch and cantaloupe.
