Buffalo Chicken Quesadillas!

Good afternoon and happy Monday wonderful followers! Anyone who knows me knows that I love buffalo chicken so when I came across this recipe (thanks pinterest) for buffalo chicken quesadillas I knew I had to try them. They were easy and dinner was on the table in under 30 minutes! Recipe: 1/4 c of buffalo sauce (I used Frank's Red Hot) 1 lb chicken breast 4 tbs of ranch dressing Salt Pepper Flour tortillas (large) 4 tbs of butter 1 1/2 c of shredded cheese ( I used Mexican blend since that's what I had on hand) Cooking Instructions: Toss chicken with buffalo sauce, salt, and pepper. Heat butter in a larger skillet over medium heat or spray with non-stick spray. Place tortilla in pan and layer with cheese, chicken, a drizzle of ranch, and more cheese. Then close and cook until it reaches desired level of crispiness. Repeat with the rest of your tortillas. I served mine with a side of ranch and cantaloupe. Happy Eating! Danielle

Easy Crockpot Beef with Broccoli

Good afternoon and Happy Friday wonderful followers! As promised, today's recipe is super easy and one of my favorite meals...beef with broccoli. Anyone who knows me knows that this is one of my favorite meals to get via take out. But why order take out when I can make it at home and it tastes twice as good? This will be getting added to my meal rotation at least twice a month. Enough of that, let's get to it! Recipe: Salt Pepper Flank Steak (thinly sliced into 2 inch pieces) 1 c of beef broth 2/3 c of soy sauce 1/3 c of brown sugar 1 tbs of sesame oil 1 tbs of minced garlic 4 c of broccoli (I prefer the florets) 2 tbs of cornstarch mixed in with 4 tbs of cold water Cooking Instructions: Season steak with salt and pepper (seasoning salt and pepper if you're like me) Place steak in crockpot with beef broth, soy sauce, brown sugar, sesame oil, and garlic. Homemade Hibachi

Good evening and happy Thursday everyone! Tonight's post will be about hibachi....one of my favorite meals to go out and buy. Recently, I was browsing Pinterest to figure out what I could do with the few items I had in my kitchen (I'm doing this thing where I try to use everything in my fridge before going to the grocery store). With two chicken breasts, zucchini, squash and rice the answer was simple...hibachi (pictured below). Recipe: Chicken (how ever much you like) Zucchini (how ever much you like) Squash (how ever much you like) Butter (I used about 2-3 tbsp) Soy sauce (depends on how much flavor you like but I used 2 tbsp) Olive Oil Salt Pepper Rice Cooking Instructions: Put Rice on (I used day old rice) Dice up your chicken and veggies Heat a little olive oil in a skillet pan Place chicken in pan with 1 tbsp. butter, 1 tbsp. soy sauce, and salt and pepper (to taste) Cook chicken all the way through and set to the side.
