Teryaki Chicken Thighs

Good afternoon and Happy Wednesday! Today, we'll be serving up delicious teriyaki chicken thighs. This recipe is so simple and tastes delicious. Plus, this sauce could be put on things other than chicken. The best part? You can put in in the crock pot on low for 3-4 hours depending on the thickness of your meat. I served my teriyaki chicken with a baked sweet potato and roasted Brussels sprouts. Recipe: 1 pack of chicken (or meat of your choice) 1/2 tsp of garlic powder 1/2 tsp of onion powder 1 cup of teriyaki sauce 3 tbsp. of brown sugar or honey (I used half of each) 1/4 tsp of salt Cooking instructions: Season meat with seasonings of your choice. (I always use black pepper and seasoning salt). Combine all of the ingredients for the teriyaki sauce. Then coat the chicken really well in the sauce. Then place in crocpot with the rest of the sauce. Cook on low for 3-4 hours and serve with sides of your choice. Happy Eating! Danie...

Garlic and Herb Turkey Chops

Happy Monday everyone! The dish of the day is garlic and herb turkey chops. Turkey chops are like pork chops but turkey instead. This is another Pinterest inspired recipe with a few tweaks of my own. If you look at the picture below you'll see that I served my turkey chops with mashed potatoes and steamed broccoli. Yummy :) Garlic and Herb Turkey Chops Recipe: 3 turkey chops (or pork chops) 1 Garlic Glove (I substituted garlic powder) 1 1/4 tsp of Rosemary 1/2 thyme 1/2 tsp sage, dried 1/2 tsp paprika (I substituted seasoning salt) 1/2 tsp black pepper Cooking instructions: Preheat oven to 350 F. Combine seasonings in bowl and season pork chops evenly (I added a smidge more seasoning salt and black pepper to mine). Spray pan baking sheet/pan with canola oil. Then bake for 35 to 40 minutes or until done. Serve with sides of your choice and enjoy! *These can also be cooked on the stovetop for those who p...

Spinach and Feta Stuffed Chicken Breast

Hello all! Today, I am stepping outside of my comfort zone and making something a little different...spinach and feta stuffed chicken breast. I've been wanting to try and make stuffed chicken breast since I've never done it before and I can across this on Pinterest and thought why not. Spinach and Feta Stuffed Chicken with Jasmine Rice Recipe: 3 chicken breasts 8 oz of spinach fresh or frozen, cooked 3 oz crumbled feta 4 oz cream cheese 1/4 tsp of salt 1/4 tsp of pepper 1 tbsp. olive oil 1 clove of garlic (substituted for a pinch of garlic powder) Cooking Instructions: Preheat oven to 450 F. Cook spinach (I sautéed mine in olive oil and then drained it) Mix spinach, feta, cream cheese, half of the salt, and garlic powder in bowl. Cut a pocket into each chicken breast. ( I pressed a large spatula on top of the chicken breast while I cut it so I wouldn't cut myself). Then season chicken (I use seasoning salt and black pepper). Stuff mixture into p...

Smoked (Turkey) Sausage and Zucchini Skillet

Hello all! Tonight's recipe is a Smoked Sausage and Zucchini Skillet! I love this recipe because it has tons of vegetables and sausage (which I don't cook with very often). I prefer to serve this skillet with jasmine rice but honestly it's filing with or without the rice. Smoked (Turkey) Sausage and Zucchini Skillet Recipe: 1 Ib of Smoked Sausage (I used butterball smoked turkey sausage and sliced it) 1/2 medium sized onion (diced) 1 tsp minced garlic 1 tbsp. butter or olive oil 1 or 2 medium sized zucchinis (sliced or diced) 1 or 2 medium sized squash, (sliced or diced) 1 container of grape/cherry tomatoes (sliced lengthwise) 1 tsp Oregano 1/2 tsp Red Pepper flakes 1/2 Salt and Pepper Cooking instructions: Heat skillet with butter and add diced onions; Cook until soft/translucent. Add in garlic and cook for about a minute before adding in sausage. Cook this for 5-7 minutes. Stir in veggies and seasoning. Cover with lid to let steam for 7-10 min...

Spinach and Feta Quiche

Good morning! On today's post, we're going to be making a spinach and feta quiche (photo below). Typically, I only have time for coffee in the morning so I have been looking for a quick and easy meal that I could pack the night before and take to work for breakfast.  One thing that I love about this recipe is that it is incredibly versatile. There are so many combinations that you can do with it. I think next time I'll add mushrooms to mine. This recipe was not only easy but delicious! Spinach and Feta Quiche Recipe: 1 - 9 inch pie crust (I prefer the roll Pillsbury roll out crust) 5 eggs 1 cup of milk (I used 2% since that's what I had) 4 oz feta cheese Handful of Mozzarella cheese (I used finely shredded Italian blend) 2 cups of fresh or frozen spinach 1 tsp butter, cut into little pieces Olive Oil Salt and Pepper Cooking Instructions: Preheat oven to 375 f. You will need to roll out the pie crust into a pie pan and then make sure you ...
